Overview:

bgm -> music and sfx -> sound_effects (missed renames)
show_xyz_screen -> spawn_xyz_screen
Screen::Playing -> Screen::Gameplay
Split play-music systems out of spawn-UI systems

Tested manually that everything seems to work properly.
