Notes

  • This is designed to be soy-free

Whole ingredients

  • 1/2 medium onion
  • 1 large carrot
  • 3 cloves garlic
  • ~ 1.5 cup cooked day old rice (harder drier rice is better)
  • 2-3 eggs
  • For carnivores, add a sausage

Mies-en-place

  • Finely dice onion
  • Finely dice carrot
  • Dice garlic
  • Beat eggs

Spices & flavors

  • 1 tsp salt
  • 1 tsp black pepper
  • ~4 tbsp ketchup

Steps

  1. Heat up oil, medium heat
  2. Add onion, garlic, carrot, salt; cook until onion is translucent
  3. Add pepper and rice; stir and break apart rice until well mixed, ~5 min
  4. Add ketchup and mix well
  5. In another pan, heat up oil and pour in beaten eggs. Make any kind of omelette, French style is canonical but only if you have the time: https://www.youtube.com/watch?v=s10etP1p2bU
  6. If you want a fancy plating, oil up a bowl with oil and then put rice in it. Use it as a shape and then put the rice on a plate.
  7. Top the rice mound with the omelette. Top with some more ketchup / whatever toppings you like.
